Summer Rotini Salad

Like many of us, we would like to eat healthy, but sometimes it seems so difficult.   Summer is a busy time for all of us, but it is also the time when a huge variety of vegetables come into season.  So here is a simple way to incorporate your veggies into a 12 minute meal!

Ingredients

  • Whole Wheat Rotini Noodles
  • 2 cups of spinach
  • 1 red tomato
  • 1 yellow tomato
  • 1 Tbs of itallian dressing, oil, or butter
  • salt to taste

Directions

Cook the whole wheat rotini noodles as directed on the package.  Usually 11 minutes to cook these babies.  Mean while, tear/cut up your 2 cups of spinach and put in a bowl.  Dice/chunk the red and yellow tomatoes.  Add to the bowl.  Next add your whole wheat noodles.  Now put on 1 Tbs of dressing/oil/butter and salt to taste.

Look – your done in only 12 minutes 🙂  AND you could go crazy with this idea… think peppers, onions, green onions, etc.  But if you think you can’t go without meat, serve this as a side dish or cut up a chicken breast and bacon to mix in.

Creamy Spinach Dip… A little naughty

This is a very quick, simple, and yummy way to use up some spinach.  The kids like to eat this on sourdough bread, I like to use it to top my grilled chicken and Ryan likes to dip tortilla chips.  However you decide to use it, just make sure you try it!!

Ingredients

  • 3 cups spinach – cut into small pieces
  • 1 bunch of green onions, diced
  • 8 oz sour cream
  • 6 oz cream cheese
  • 2 Tbs oil
  • 1 clove garlic
  • parsley
  • salt and pepper to taste

Directions

Place 2 Tbs oil in a sauce pan and heat on high for 2 minutes.


Dice garlic and green onions.  Add both to pan and cook until they begin to caramelize.
Add sour cream, cream cheese, parsley, and salt and pepper to taste.  Stir continuously until well combined.


Cool for 2 minutes and serve.

 

 

Spinach Stromboli

Ingredients:

  • 8 cups fresh spinach, washed thoroughly and patted dry
  • 1 tbls minced garlic
  • 2 small onions, chopped
  • 3 tbls olive oil, plus additional for brushing
  • 1 whole wheat pizza dough
  • 1/2 cup low fat sour cream
  • 1/4 cup shredded good parmesan cheese
  • 1/2 cup shredded sharp Cabot cheddar
  • 1/2 -1 cup of tomato sauce

Directions:

Saute spinach onions and garlic in olive oil until soft.  Meanwhile roll out pizza dough until thin, about 1/8 inch thick.  Combine sour cream and cheeses.  Once spinach mixture has cooled add sour cream/cheese mixture.  On a large cookie sheet brush olive oil.  Please dough on sheet.  Put mixture in center of dough, top with sauce and fold over.  Poke holes in the top.  Brush top with olive oil and sprinkle additional parmesan cheese and minced garlic.  Cook for 15-20 minutes until golden brown. Enjoy!
